Chai Latte MuffinsSpiced Chai Honey & Yogurt Muffins

We just had to share this recipe with you. Give it a try - you'll be glad you did! We didn't have any runny honey and used set honey instead, it still tasted fantastic. You can probably adapt this recipe to suit your personal tastes, but ensure you use Drink Me Spiced Chai rather than any other flavour as it contains cinnamon which works perfectly.

This recipes makes 12 gorgeous muffins

 
3 tbsp Drink Me Spiced Chai
2 tbsp boiling water
125ml milk
225g plain flour
50g medium oatmeal
50g light muscavado sugar
50g butter, melted
1 x 200g tub Greek style yoghurt

1 1/2 tsp baking powder
1 tsp bicarbonate of soda
a pinch of salt
1 large egg, beaten
4 tbsp runny honey
Some medium oatmeal for dusting

Start by preheating your oven to 200c / 400f / gas mark 6. Place the Spiced Chai  in abowl or  jug, add the boiling water and stir until dissolved and smooth.

Top this mixture up with the milk and then set it aside. In a large bowl sift together the plain flour with the baking powder, bicarbonate of soda and salt. Stir in the oatmeal and sugar and make a well in the center.

In a jug mix together the melted butter, yoghurt, beaten eggs and honey, then stir in the Spiced Chai mixture and pour into the dry mixture.

Stir together until it’s complete mixed. If it looks a little lumpy, don’t worry, it will just result in a slightly rubbery texture.

Divide the mixture evenly across a 12 hole deep muffin tin lined with muffin cases, then sprinkle each with a little extra oatmeal. Place the muffins in a preheated oven for 15 - 18 minutes or until well risen, golden and firm to the touch.

Remove from the oven and cool for a few minutes in the tin before removing and cooling on a wire rack.

Just delicious served slightly warm.
